Ingredients:
- 2 ripe bananas
- 1 cup all-purpose flour
- 1 cup coconut milk
- 1 tbsp sugar (or your preferred sweetener)
- 2 tsp baking powder
- Pinch of salt
- Butter or coconut oil for cooking
Instructions:
- Mash the bananas in a bowl until smooth.
- Mix in the coconut milk.
- In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
- Combine the dry ingredients with the banana mixture.
- Heat a pan over medium heat and melt a bit of butter or coconut oil.
- Pour a ladleful of batter onto the pan and cook until bubbles form on the surface.
- Flip and cook until golden brown. Serve warm with tropical fruit syrup or honey.
