Creamy Carrot Soup 🥕
This delicious creamy carrot soup is perfect for a cozy dinner or a soothing lunch.
Ingredients:
- 1 lb carrots, peeled and sliced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh dill and parsley for garnish
Instructions:
- In a large pot, sauté the onion and garlic until translucent.
- Add the carrots and vegetable broth. Bring to a boil.
- Reduce heat and simmer until carrots are tender, about 20 minutes.
- Puree the mixture with an immersion blender until smooth.
- Stir in cream, season with salt and pepper.
- Garnish with dill and parsley before serving. Enjoy!
