Lemon Herb Risotto 🍋🌿
Ingredients:
- 1 cup Arborio rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup white wine
- 4 cups vegetable broth
- 1 lemon, zest and juice
- 1/4 cup grated Parmesan cheese
- Fresh herbs (basil, parsley, or thyme)
- Salt and pepper to taste
Instructions:
- Heat the broth in a pan and keep it warm.
- In a separate pot, sauté onions and garlic until translucent.
- Add the rice, stirring to coat with the oil.
- Pour in the white wine and stir until absorbed.
- Add the broth one cup at a time, stirring until fully absorbed before adding more.
- Once the rice is creamy and tender, stir in lemon zest and juice.
- Remove from heat and mix in Parmesan cheese and fresh herbs.
- Adjust seasoning with salt and pepper and serve hot!
