Ingredients
- 2 medium sweet potatoes, grated 🥔
- 1 small onion, finely chopped 🧅
- 2 eggs, beaten 🥚
- 1/2 cup flour
- 1 tsp baking powder
- Salt and pepper to taste
- Olive oil for frying
Instructions
- In a large bowl, mix together sweet potatoes, onion, eggs, flour, and baking powder. Season with salt and pepper.
- Heat olive oil in a skillet over medium heat.
- Spoon about 2 tablespoons of the mixture for each fritter into the skillet. Flatten them gently with a spatula.
- Cook for about 3-4 minutes on each side, or until golden brown.
- Remove and drain on paper towels. Serve warm. Enjoy! 😋
