Ingredients
- 1 cup Arborio rice
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 pound mixed seafood (shrimp, scallops, calamari)
- 4 cups seafood broth
- 1 cup white wine
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped
Instructions
- In a large pan, heat olive oil over medium heat. Add chopped onion and cook until translucent.
- Add minced garlic and seafood. Sauté for about 3-4 minutes.
- Add Arborio rice and stir for 2 minutes until slightly translucent.
- Pour in white wine and cook until mostly absorbed.
- Add seafood broth, one cup at a time, stirring constantly and allowing the liquid to be absorbed before adding more.
- Once the rice is creamy and cooked al dente, stir in Parmesan cheese.
- Season with salt, pepper, and garnish with fresh parsley.
