The Traditional Moroccan Couscous
Couscous is a staple food in Moroccan cuisine known for its versatility and delightful taste. Typically served during family gatherings, this dish brings both flavor and tradition to any table.
Ingredients:
- 1 kg couscous
- 500g lamb or beef, cubed
- 2 onions, sliced
- 4 carrots, peeled and sliced
- 2 zucchinis, sliced
- 1 can chickpeas, drained
- 100g raisins
- 2 tsp ground cumin
- 1 tsp turmeric
- Salt and pepper to taste
- 3 tbsp olive oil
Instructions:
- In a large pot, heat olive oil and brown the meat.
- Add onions and cook until they become translucent.
- Add carrots, zucchini, chickpeas, cumin, turmeric, salt, and pepper. Cover with water and simmer until meat and vegetables are tender.
- Prepare the couscous according to package instructions.
- Spoon the couscous onto a large serving platter and cover with the meat and vegetable mixture.
- Garnish with raisins and additional cumin if desired before serving.
