  1. Pound the chicken fillets until they are evenly thick. Coat them in flour, then dip in beaten eggs, and finally cover with breadcrumbs.
  2. Heat oil in a frying pan and cook the coated chicken until golden and crispy.
  3. In another pan, sauté onions and carrots until soft. Add curry powder and stir for a few seconds.
  4. Add chicken stock and soy sauce, bring to a boil, then simmer to thicken the sauce.
  5. Serve the cooked chicken on a plate with rice and pour the curry sauce over the top.
