Tropical Fruit Salad 🥭🍍
Ingredients:
- 1 mango, diced
- 1/2 pineapple, diced
- 2 kiwis, sliced
- 1 dragon fruit, cubed
- Fresh mint leaves
- Lime juice
Instructions:
- Combine all the fruits in a large bowl.
- Squeeze lime juice over the mixture.
- Toss gently and garnish with mint leaves.
- Chill for 30 minutes before serving. Enjoy!
Moroccan Tagine 🥘
Ingredients:
- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 lb lamb, cubed
- 2 tsp ground cumin
- 1 tsp ground cinnamon
- 1/2 cup dried apricots
- 1 can chickpeas, drained
- 1 cup chicken broth
Instructions:
- Heat oil in a pot, add onion and garlic, sauté until soft.
- Add lamb and brown on all sides.
- Mix in cumin and cinnamon, then add apricots and chickpeas.
- Pour in chicken broth, bring to a boil, then simmer for 45 minutes.
