Ingredients
- 1 lb chicken breast, cut into cubes
- 1 tbsp vegetable oil
- 1 onion, chopped
- 1-2 tbsp green curry paste
- 1 can coconut milk (13.5 oz)
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1/2 cup fresh basil leaves
- Salt and pepper to taste
Instructions
- Heat oil in a large skillet over medium heat. Add onion and sauté until translucent.
- Add chicken cubes and cook until they are lightly browned.
- Stir in green curry paste and mix until chicken is well-coated.
- Pour in coconut milk, bring to a simmer and cook for 10 minutes.
- Add bell pepper and zucchini, cook until veggies are tender.
- Stir in basil leaves, season with salt and pepper.
