Ingredients
- 1 cup all-purpose flour (maida)
- 2 tablespoons cornflour
- 1/4 teaspoon baking powder
- 1 cup yogurt (curd)
- A pinch of saffron strands
- 1 cup sugar
- 1/2 cup water
- Ghee or oil for frying
- A few drops of rose water (optional)
Instructions
- Begin by mixing the flour, cornflour, and baking powder together in a bowl. Add the yogurt and whisk until smooth. Allow this batter to ferment for at least 10 hours.
- Heat ghee or oil in a pan. Pour the fermented batter into a piping bag or squeeze bottle.
- Carefully pipe the batter into the hot oil, forming spiral shapes. Fry until golden brown.
- Meanwhile, prepare the sugar syrup by dissolving sugar in water and adding saffron strands. Boil until slightly thickened.
- Immerse the fried jalebis into the warm syrup for a few seconds, ensuring they are evenly coated.
- Optionally, sprinkle with rose water before serving.
