Ingredients
- 8 flour tortillas
- 2 cups of shredded cheese (cheddar or a Mexican blend)
- 1 cup of cooked chicken, shredded
- 1/2 cup of chopped bell peppers
- 1/2 cup of chopped onions
- 2 tablespoons of butter
Instructions
- Heat a large skillet over medium heat and melt a tablespoon of butter.
- Place one tortilla in the skillet and sprinkle with cheese, chicken, bell peppers, and onions.
- Top with another tortilla and cook until the bottom tortilla is golden brown. Carefully flip and cook until the other side is golden and the cheese is melted.
- Repeat with the remaining tortillas and filling, adding more butter to the skillet as needed.
- Cut into wedges and serve warm, with salsa or sour cream if desired.
