  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine rice and water in a medium saucepan; bring to a boil. Turn the heat down to low and simmer, covered, for 20 minutes.
  3. Mix rice vinegar, sugar, and salt in a small bowl. Pour over the warm rice and mix well.
  4. Place a nori sheet on a bamboo sushi mat. Spread sushi rice over the nori, leaving a border at the top edge.
  5. Layer avocado, cucumber, and fish on the rice.
  6. Roll the sushi tight with the help of the mat. Slice into rounds with a sharp knife dipped in water.
