Traditional Chicken Tajine Recipe
Ingredients:
- 1 kg chicken pieces
- 2 tablespoons olive oil
- 2 onions, sliced
- 3 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 teaspoon turmeric
- 1 teaspoon cinnamon
- Salt and pepper to taste
- 1 preserved lemon, quartered
- Handful of olives
- Fresh cilantro and parsley for garnish
Instructions:
- Heat olive oil in a tajine or heavy-bottomed pot over medium heat.
- Add onions and garlic, sauté until golden.
- Add chicken and brown on all sides.
- Stir in ginger, turmeric, cinnamon, salt, and pepper.
- Add lemon and olives, then cover and simmer for about 45 minutes until chicken is tender.
- Garnish with fresh cilantro and parsley before serving.
