- 1 large egg
- 1 cup ice-cold water
- A selection of vegetables (like sweet potatoes, bell peppers, and carrots)
- Shrimp or other proteins of your choice
- Vegetable oil for frying
- Sea salt
Instructions:
- Prepare the batter: In a medium bowl, beat the egg and mix with ice-cold water. Add flour gently and mix until lumpy - avoid overmixing!
- Heat the oil: In a deep pan, heat the oil to 350°F (175°C).
- Dip and fry: Coat vegetables and shrimp in the batter and fry a few pieces at a time until golden brown.
- Drain and season: Remove and drain on paper towels. Sprinkle with sea salt to taste.
